  • - 101g Basmati rice
  • - 68g Red cabbage
  • - 74g Avocado
  • - 44g Cucumber
  • - 6 tsp Lime juice
  • - 4.6 tsp Extra virgin olive oil
  • - 10g Garlic, minced
  • - 6g Fresh coriander, chopped
  • - 1.3g Green chilli, minced
  • - 1.2 tsp Unrefined cane sugar
  • - 1.68g Himalayan rock salt
  • - 1.2g Black pepper
  • - A pinch of oregano, onion powder, garlic powder, and chilli flakes

Step-by-Step Instructions

Step 1: Marinate the Red Cabbage (12–24 hours)

Mix 6 tsp lime juice, a pinch of onion powder, garlic powder, black pepper, 1.2 tsp sugar, and 1.68g salt in a bowl.

Add the marinade to 68g shredded red cabbage and toss until well coated.

Cover and refrigerate for 12 to 24 hours for the best flavour. Once marinated, drain the cabbage fully before using.

Step 2: Prepare the Lime and Coriander Rice (20–25 minutes)

Rinse 101g basmati rice under cold water until the water runs clear.

In a medium saucepan, bring 1 ½ cups (375ml) of water and ½ tsp salt to a boil. Add the rice, reduce the heat to low, cover, and simmer for 18–20 minutes, or until the water is absorbed and the rice is tender.

Remove from heat, uncover, and let it rest for 5 minutes.

In a mixing bowl, combine 2 tsp lime juice, 6g chopped fresh coriander, a pinch of oregano, and black pepper. Stir the mixture into the cooked rice and set it aside, keeping it warm.

Step 3: Make the Avocado Purée (5 minutes)

In a blender, combine 74g ripe avocado, 2 tbsp water, 2 tsp olive oil, 1 tsp lime juice, and a pinch of salt. Blend for 1–2 minutes until smooth and creamy. Set aside.

Step 4: Prepare the Cucumber Salsa (10 minutes)

Blend 44g cucumber and 1.3g green chilli in a blender for 1–2 minutes until smooth.

Strain the mixture through a fine mesh sieve to remove excess liquid.

In a bowl, combine the strained cucumber blend with 0.10g dried oregano, 2g chopped fresh coriander, a pinch of chilli flakes, and a pinch of salt. Blend for an additional 1 minute until fully combined. Set aside.

Season 176g sea bass fillet with a pinch of salt, black pepper, garlic powder, and onion powder.

Heat 2 tsp olive oil in a skillet over medium-high heat. Once the oil is shimmering, add the sea bass. Cook for 3–4 minutes on each side, or until golden and flaky.
